Summer Pasta Salad

Here is another recipe from my menu this week. This is one that was given to me by my sister in law, Rachel and soon after became one of my favorites. Although she doesn't usually have formal recipes. She is one of "those" cooks. You know the ones that make ridiculously delicious food and when you ask them for the recipe all they can tell you is what was in it. As far as the amounts they just add until it tastes good.lol. Well I bugged her a lot for this one because it really is super delicious. Luckily she obliged me and sent me this one through email. She is so great that way. ;) The great part about this one is that it can be changed to fit whatever veggies you have on hand. Ok, I will quite talking and just get to the recipe. Here it is, but I warn you. Once you taste it you may develop a strong addiction to it that will tempt you to make it once a week. If you are lucky your family will welcome your addiction. I was not so lucky, but I make it anyway. Soooo YUMMY!

Summer Pasta Salad

1 lb cooked penne pasta – make sure to salt the water when cooking to flavor the pasta
1 lb low fat sausage
1 small onion diced
1 clove garlic diced (optional)
½ package of Hidden Valley Ranch dry dressing
About ¼ cup olive oil
1 cup corn kernels – frozen or fresh
Assorted chopped fresh/raw veggies (peppers, asparagus, green beans, peas, avocado, tomatoes, are my favs but you can use whatever you have on hand)

Brown sausage, add onion, garlic, peppers and corn and cook until lightly caramelized. Add any vegetables you want to sauté. ( I add the asparagus at this point) Drain pasta and add to large bowl. Add enough olive oil to lightly moisten pasta. Add ranch dressing mix and whatever other seasonings you want to add ( I like dried chipolte chili pepper, rosemary and garlic salt. Add meat and vegetables and adjust seasoning to your taste. I like to add frozen peas which will thaw just by the heat from the meat and veggies. I also stir in my diced or cherry tomatoes and diced avocado at this point. This salad is great served as a warm pasta for a main dish or cold as a side dish. it also reheats wonderfully the next day.

Grilled Chicken Salad

So here is the chicken salad recipe that I promised you guys from last week. It is a great summer meal and very easy to make. It is so easy I wouldn't really call this a "recipe" but it is a family favorite at my house.

Grilled Chicken Salad (serves 4)
2 boneless skinless chicken breasts
1 head of lettuce (your choice...i like green leaf for this)
1-2 tomatoes, diced
1 cup canned black beans, drained & rinsed
1 cup corn
1-2 avocados, cut into chunks
1 cup fritos or crushed tortilla chips
Season each side of your chicken breasts with salt and pepper and grill until done. Remove from heat and slice into strips. Place all other ingredients in a bowl or onto serving plates and top with warm chicken. Serve with the dressing of your choice. Although I prefer it without dressing my family likes it with ranch. Enjoy!

Last week before I went out of town I couldn't help but make a quick trip to Safeway and King Soopers for some of the AWESOME deals they had going on. I love it when things all line up where you can stack a great sale price+a MF coupon+ an e-coupon+ a catalina. It doesn't happen all the time but when it does I get so excited. That is what happened last week. I won't list out all of the individual prices as these deals aren't still going on, but lets just say that last weeks sales is why I coupon. Deals like this keep me going when I am tired of clipping and sorting and filing and putting my list together.

I almost forgot that I made a quick trip to Target for a few good deals, which turned into a few great deals. My cashier was very generous in the coupon department. I am not sure if she doesn't know it but Target's policy is typically to adjust coupon amounts to match the price of the item if there will be overage. She just pushed them all through without adjusting making for some sweet overage!

Safeway is having a fantastic frozen food promotion that is going on all month long. When you spend $25 in participating products then you get a $10 CAT ONYO. The ad says it can be used on your next order but the actual CAT that printed said it was to be used on your next "frozen foods" purchase. I think I would keep a copy of the ad just in case. :) There are a number of coupons that coincide with the participating products. (there are many). The best way to maximize your savings is to have your transaction be as close in price to $25 as possible. Then do multiple transactions and roll the CAT. This is what I did today. I did a total of 3 transactions.
