Pumpkin Spice Bars

This recipe was one that I got from a friend of my mother in law. I love that the cake (bar) is super moist, and the cream cheese frosting...oh the frosting. It is sooooo good. Probably one of the best I have ever had. The combination is pure heaven in my opinion and the perfect fall treat.

Pumpkin Spice Bars
4 eggs
1 2/3 C sugar
1 C oil
1-16 oz. can pumpkin
2 C flour
2 t baking powder
1 t cinnamon
1 t nutmeg
1 t cloves
1 t baking soda
½ t salt

In a mixing bowl beat together eggs, sugar, oil and pumpkin until light and fluffy. In a separate bowl sift together flour, baking powder, cinnamon, coves, nutmeg, baking soda and salt. Add to pumpkin mixture and mix thoroughly. Bake in an ungreased jellyroll pan for 25-30 minutes. Cool completely and frost with cream cheese frosting. Top cake with chopped walnuts or pecans if desired.

Cream Cheese Frosting
3 oz. pkg. cream cheese, softened
½ C butter, softened
1 t vanilla
2 C powdered sugar

Beat mixture until creamy. You can add a little milk if desired to make the constancy more spreadable.
