This recipe was passed to me from my sister in-law Sarah. It is not the best meal for watching your waistline, but it is definitely worth the splurge once in a while.
4-6 large baking potatoes
4 green onions, diced
2/3 cup butter
12 slices bacon, cooked and crumbled
2/3 C flour
6 cup milk
1 ½ cup cheddar cheese, shredded
¾ t salt
8 oz. Sour cream
½ t white pepper
Wash, dry & prick potatoes with a fork. Bake 400 degrees for 1 hour or until done, cool. Cut ½ lengthwise. Scoop out pulp. Set aside. Melt butter in a heavy saucepan over low heat. Add flour stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk & cook over medium heat, stirring constantly until mixture is thickened and bubbly. Add potato pulp, salt & pepper. 2 tablespoons of green onion & half bacon & 1 cup cheese. Cook until thoroughly heated. Stir in sour cream & extra milk if necessary. Serve with remaining green onion, bacon & cheese. Make 10 servings
